Class Description
ENTRY REQUIREMENT: No formal
entry requirements students should simply have a genuine interest in cooking.
GENERAL AIM OF THE COURSE To welcome students to a fascinating culinary journey which takes you from the south of China to the east of India and the north of Australia – taking in the food of Thailand, Vietnam, Philippines, Cambodia, Malaysia, Laos, Burma and Singapore. Liven up a Scottish winter with dishes which will magic you to the lands of palm-fringed beaches, ancient cities and incredible South East Asian culture. Ingredients can be obtained from supermarkets and local shops and recipes are easy to follow. This course will equip students with the ability to cook and present a variety of South East Asian meals.
GENERAL APPROACH TO THE COURSE: Demonstration and supervision LEARNING OUTCOMES:
By the end of the course students will be able to: 1. Prepare, cook and present a variety of starters, main courses and desserts from South East Asia 2. Demonstrate knowledge of South East Asia ingredients and their uses 3. Choose dishes which complement each other MATERIALS REQUIRED BY THE STUDENT: Students will provide all ingredients; a pestle and mortar could be useful and more authentic. Ingredients and any equipment required will be advised by the tutor on a week-to-week basis.
